Why Heritage Grains

Solina grain (Tagliatelle Solina) — an ancient Abruzzo mountain soft-wheat landrace, cold-hardy and naturally aromatic; delivers delicate nutty/cereal notes and a silky bite.

Senatore Cappelli (Sedanini, Paccheri rigati) — a historic Italian durum selected in the early 1900s, prized for flavour and firm structure; ours is grown and milled in Abruzzo near Gran Sasso.

Selected durum wheat (Calamarata, Chitarra, Fusillini) — a curated blend of Italian durum flours developed to highlight each grain’s best traits, noted for amber colour and slightly coarser semolina.
All are bronze-drawn and slow-dried for superior sauce cling and authentic al dente texture.
How to cook & pair
Bring a large pot of water to a rolling boil, then salt (≈10 g per 1 L). Add pasta to boiling salted water.
Cook to "al dente"until 2 minutes before the time on pack and start tasting. Move pasta to a pan with sauce and toss 2 minutes to finish cooking—better sauce absorption, glossy al dente. Serve immediately.
Reserve some pasta water and toss with sauce off the heat.

How to choose your pasta shape

Long cuts (Capellini, Linguine, Chitarrina): best with seafood, light tomato, oil-based sauces.

Ribbon cuts (Tagliatelle, Tagliolini): ideal for ragù, creamy mushroom, truffle.

Short shapes (Paccheri, Calamarata, Fusillini, Sedanini): great with chunky vegetables, meat sauces, and baked dishes.

Cooking tips for perfect al dente
Use plenty of salted water (10 g salt per 1 L). Start tasting 1 minute before the suggested time. Save ½ cup of pasta water and finish in the pan with the sauce for glossy emulsification.
