Option 1 · Cheese cream & Black pepper + Parmigiano 30 months

Cook tagliolini in well-salted water until al dente (follow pack time).

Warm the sauce: in a pan over low heat, add the cheese & black pepper cream with 2–3 tbsp pasta water to loosen.

Toss the drained pasta into the pan off the heat, adding more pasta water as needed to create a silky coating.

Finish with coarse shavings of Parmigiano Reggiano 30 months and a few drops of truffle EVOO.
Chef tips: keep the pan gentle (no boiling) to avoid splitting; reserve at least ½ cup of pasta water.

Option 2 · Black Truffle EVOO & Parmigiano Reggiano aged 30 months

Emulsify 2–3 tbsp truffle EVOO in a warm pan with 2–3 tbsp pasta water until slightly creamy.

Toss in the al dente tagliolini; add a touch more pasta water if needed for gloss.

Finish with Parmigiano Reggiano 30 months and freshly cracked pepper to taste.
Chef tips: adjust salt carefully (Parmigiano adds salinity); serve in warm bowls.
