1. Begin with the aperitivo
Break the Parmigiano Reggiano into small, irregular pieces. Serve with the olive oil crackers and drizzle the cheese lightly with acacia and black truffle honey.

2. Prepare the black truffle tagliolini
Cook the tagliolini in generously salted boiling water according to the instructions on the pack. Reserve a little pasta water before draining.

In a warm pan away from direct heat, combine the black truffle EVOO with a few spoonfuls of pasta water. Add the tagliolini and toss gently until evenly coated. Finish with generous shavings of Parmigiano Reggiano.

3. Pour the Chianti Classico
Serve the wine at approximately 18–20 °C with the truffle tagliolini and aged Parmigiano. Its fruit and spice notes complement the savoury character of the cheese and truffle.

4. Finish with dark chocolate and orange
End the meal with squares of dark chocolate with candied orange peel. Enjoy on its own or with the final small serving of Chianti Classico.

Chef’s tip
Avoid heating the truffle EVOO over a high flame. Gentle heat helps preserve its aroma. Reserve enough pasta water to create a smooth, glossy coating.
